Welcome to Project: Grilled Cheese

Our credo is simple. We like grilled cheeses, and we think it will be fun to work together to eat them and then write about them.

Our plan is simple, too. Every Tuesday night, your two intrepid bloggers (myself, and my co-conspiritor, Coaster) will go out for grilled cheeses. At least once a month, we will brave a new restaurant, and try their grilled cheeses. You will get to read both of our impressions here.

Our mission is to probe the heart of American cuisine by way of fried bread with cheese.

If a place normally serves grilled cheeses, then how they make them can tell a lot about how they treat food. If an establishment doesn't normally serve grilled cheeses, then you can learn even more about them by how they deal with being asked to.

Did we mention that we really like grilled cheese sandwiches?
